Job Summary

To run an efficient, commercially aware kitchen providing good quality, healthy meals for our guests. Maintaining high levels of hygiene, cleanliness and health and safety. 

Key Responsibilities and Accountabilities:

Health & Safety, Legislation and Legal Requirements:

Ensure the highest standards of health and hygiene in the kitchen, abiding to local and European regulations.  

Management and Team Development:

Manage, train & develop the kitchen team

To attend weekly meetings with Hotel Manager and other Heads of Departments

Act as Duty Manager for the hotel when required

Prepare staff rotas in line with business requirements

Ensure punctuality and reliability within the department

Ensuring your team is motivated and enthusiastic

Implementation of disciplinary procedures where required along with the Hotel Manager

Customer Service:

Production of company set menus to provide healthy, nourishing foods to our guests

Maintain and improve service standards to improve customer feedback and encourage repeat business

Provide good quality, healthy and varied staff meals within the budget provided

Financial Awareness and Sales:

Order foods from nominated suppliers

Minimise loss and wastage

Encourage terrace food sales and maximising profit

Take control of weekly stock takes

Ensure stock rotation policy in place 

Person Specification and Skills:

Experience of special dietary requirements, stock control and ordering

Level 1 Health & Safety & Level 2 Health & Hygiene an advantage

Able to maximise all business opportunities with a pro-active approach

Good eye for detail and accuracy

Passionate about the hospitality/ski industry and customer service

Excellent communication and customer service skills

Previous man-management experience

Proven leadership ability and skills to motivate others

Well organised, good planning skills and flexible

Competent and enthusiastic

Working knowledge of French an advantage

Positive and self-motivated

Hands-on approach
